When Carlo Pedone opened Trattoria di Carlo in 2002, he wanted a restaurant rooted in his family's heritage. The recipes used in our kitchen started with Carlo's grandmother, who brought her famous red sauce to the United States from Sicily. In 2021, Carlo shifted his new Pinsa operation and closed the restaurant.
In 2023, Frank Carini had a passion to reopen Trattoria di Carlo and bring the long-standing Oak Creek favorite back to life. Today, the Carini and Jossart families lead a dedicated staff, who pride themselves on serving our community. All of the dishes are made fresh and use all of Chef Carlo's original recipes and ingredients from the day he opened the doors in 2002. Trattoria di Carlo is all about cooking the perfect food for your family.
